Blaine Connett: Enjoy the wholesome goodness of my world famous carrot soup:1 1/4 pounds wholesome carrots1 tablespoon extra-virgin olive oil (or clarified butter)2 medium cloves garlic, minced1 large yellow onion, chopped3 cups+ vegetable stock or waterjuice of 1/2 a lemonfine grain sea salt (as much as you need)- olive oil, toasted sesame oil, or red chile oil for a finishing drizzle - if you use toasted sesame oil (sometimes labeled pure sesame oil) it is very strong. I typically dilute it with olive oil. I use one part sesame oil to four parts olive oil.Take the tops off the wholesome carrots (if they have tops) and give them a good scrub. Cut them into 1-inch segments and set aside. Heat the olive oil ! in a large, heavy soup pot over medium heat. Add the garlic and onions and saute for a few minutes or until the onions start to get translucent. Add the stock and wholesome carrots and bring to a gentle boil. Lower the heat and simmer for 20 - 30 minutes or until the wholesome carrots are tender - longer if your wholesome carrot pieces ended up larger. But try not to overcook. Remove from heat and cool for a few minutes.Puree with a hand blender (sometimes I leave the soup a bit chunky, other times I go completely smooth) - then stir in the lemon juice. Now salt to taste. If you used a salty veggie stock, you might just need a little salt. If you used water, you'll need quite a bit more. Keep adding a few pinches at a time until the wholesome carrot flavor really pops. If it tastes flat or dull, keep adding.Finish with a drizzle of great extra-virgin olive oil, one of the other drizzles I mention up above, or whatever twist you come up with....Show more

Cedric Grimstead: i thought about it, and ended up deciding on being one for a month, it was ok, i love veggies so wasnt hard, but without those carbs and protein which is obtained easier from meat and breads i found myself tired all the time. and also had a low blood sugar which made me tired even more, but as soon as i started eating right it went away. what i did was 2 weeks a vegan, so no milk, no choose, no bread, no meat. other 2 weeks in the month was milk allowed, so ate alot of yogur! t. also recently i started the primal diet so it keeps you fueled and b! ody feeling amazing! look into it...Show more

Coleman Coscia: Soup is very easy and hard to mess up.2 cups diced carrots2 cups diced celery2 cups diced onionSaute these together in a couple of Tablespoons of Olive Oil to sweat the ingredients. The goal is not to brown the ingredients but over a medium ! low heat to soften the ingredients. Once the ingredients have soften add 6-8 cups of stock of your choice (store bought works just fine). Add any other vegetables of your choice what ever you like would go great in a soup. Potatoes, egg plant, spinach, beans or lentils the skys the limit play with it and make it yours. Just make sure your vegetables have soften before serving. I myself enjoy barley in my soup and for that just follow the package instructions.Season to taste....Show more

I figure no matter what I'm cooking, if it tastes good, then it's "right":Onion Soup3 Large Onions, thinly sliced into rings2-3 Garlic cloves, minced (I love garlic)2-3 Tbsp Olive oil or earth balance vegan spread or butter2-3 tsp dried or fresh thyme2 bay leaves4-6 cups vegetable broth (Not-Beef is good, so is Better-Than-Bouillon)1/2 Cup of white wine (or more... what's too much wine, anyway? You could substitute or omit if you're dry, though)Salt and Pepper to taste1. Sweat the onion, garlic, bay leaves, and thyme in olive oil over medium heat until translucent (a little golden brown is okay in this recipe).2. Add veggie broth, wine, and salt & pepper, bring to boil3.Reduce heat and simmer until onions and whatever else you've added is tender. Remove bay leaves and enjoy with crisp! y bread.Thinly sliced celery, mushrooms, carrots, and kale all work wel! l if added to the pot. You could include pan-fried tofu, too. Perry Deshazior: I'm the oldest of 9 kids. All biological, and from the same parents who are still together (So untypical i know!) But I just recently went vegetarian (I'm 16) And my mom is VERY supportive. Of course she has to cook for the rest of the family, and my dad is the typical meat eating guy, so when she makes meals that have meat I just cook something else. Or when I do cook myself food I make doubles or triples and save it for another meal when she makes a meat dish. I eat lots of fruits and put veggies in with my pasta or rice etc all the time. I eat whole wheat breads (My family is pretty health conscious so my mom makes whole wheat bread anyways, but she still buys some white flour products for easy meals bc of the big family, which I usually skip because I prefer not to eat white flour products.)And for breakfasts I make mys! elf whole wheat banana bread with some semi sweet chocolate chips in it, it'll last me a while if the kids don't eat it. I usually top it with lowfat vanilla flavored yogurt and fruit. For lunch eat rice, or pasta with veggies. Dinner same thing, or eat what they're having as long as it isn't meat!!! Like cheese filled ravioli, or cheese pizza if it's just one of those nights. Try hard to stick to whole grains though! And for snacks do nuts and berries or trail mix. I don't really eat cheese, butter, milk or eggs unless it's on top of a casserole or baked into foods so I don't worry about it. But I don't not eat it ... I just don't find myself eating it often.This should help! I'm glad your considering this because those poor animals are so abused... have you seen the video on youtube about farm animal cruelty? Ronny Dorge: Well, you can become a lacto-ovovegetarian or a vegan. The first eats dairy products and eggs, but no flesh. Vegan doesn't eat dairy or eggs.Also, if you are going to be a true vegetarian, you can not eat fish or chicken either. Do not worry about protein deficiencies. They are very rare. Most veggies have at least 20% of their calories from protein. Othe! r excellent sources of protein include beans/lentils/nuts/grains/soy.Check out your local food co-op of you have one, or even Walmart. They always have tons of vegetarian dishes that are pre-made if you like that sort of thing. Amada Greising: I would absolutely recommend it! Don't listen to the people who say its unhealthy because they are just uneducated on the matter. I became vegan 9 years ago because I am a huge animal lover and just could not find a good reason to eat them. The health benefits are everything from decreased risk of many cancers to lower weight, healthier skin, lower risk of cardiovascular dis! eases. And so much more. If you think about it veggie sources have all the good nutrients that help us stay healthy. Obviously you would have to make sure you eat right but this is true of any diet. The diff veggies I know are vegans which consume no animal products, I think pescetarians eat no meat except fish, vegetarians avoid meat and I know there are more.. Like flexitarian which is sort of a part time vegetarian. So I love my vegan diet and all the animals I get to help I say go for it if it's what you want. It can be very healthy! Billie Bratchett: Make sure to change to a vegetarian very gradually. Don't just completely eliminated meat from your diet one day, it will make you sick and vomit. Start by taking out one kind of meat from your diet and after about 2-3 weeks take out another meat or 2. That way you gradually ease yourself into being a vegetarian and don't get sick along the way. Good luck :)

Brittanie Zakutney: Well, for starters, you shouldn't be using to microwave at all, or at least as little as you can. Why? Well, it kills all the vitamins and nutrients in the food, and it sends out some sort of radio active wave that kills your brain cells. But, if your desperate, then you could put it in a microwave safe container, fill it up with water until it covers the egg, them put it in until the water starts boiling then just check it occasionally you might have to take it out a few times,just to test and make sure its fully cooked.
